Shaoxing Wine Chicken 黄酒鸡


Shaoxing wine,绍兴酒 is one of the most famous varieties huangjiu,黄酒 (means yellow wine), fermented from rice. It originates from the region of Shaoxing, in the Zhejiang province of Eastern China. It can be consumed as a beverage and a cooking wine in Chinese cuisine.

Shaoxing wine chicken is commonly served to women who just gave birth during their confinement month (normally for the period of one month). It is consider as a very "heaty" dish, so friendly reminder here that you do not consume this dish if you have sore throat or having a fever. However, it is better to eat during the cold weather because you will definitely feel warm after having it.

Ingredients:
  • 1/2 Chicken (about 900-1000g). cut into small pieces
  • 30g Ginger, sliced
  • 1 tbsp Sesame oil
  • 25-30g Black Fungus (Chinese edible tree fungus)
  • 250ml Shaoxing wine (add more if you like)
  • 1 tbsp Light soy sauce
  • 1/2 tsp Dark soy sauce
  • 1/2 tsp salt
  • 1 tsp sugar (optional)


Note: Soak the black fungus in a bowl of water until soften. Clean the fungus thoroughly to get rid of all the dirt. When the fungus is clean, cut and discard the harden part of the fungus. Roll the fungus and slice into thin stripes.

Method:
  • Heat sesame oil over medium heat in the pan.
  • Add ginger and fry until fragrant.
  • Add chicken pieces and fry until slightly brown.

  • Add the black fungus stripes, wine, light soy sauce, dark soy sauce, sugar and salt. Stir fry until well combined.



  • When it is boiling, lower the heat and simmer until the chicken is softened.
