No Crack, Easy Peel Hard-Boiled Fresh Eggs: Steam Them, Not Boil! "蒸"水煮鸡蛋

I love hard boiled eggs as they are such a quick, easy  and nutritious snack. They can also be used to make egg salad, egg mayonnaise sandwiches, deviled eggs, eggs with braised pork belly (please check out my post) and a lot more.

Have you ever faced difficulties in peeling hard boiled eggs using the traditional boiling method? I know I have, especially when I used those very fresh eggs! There are a few tips in producing perfect hard boiled eggs, such as poke a hole in the end of the egg with a pin before boiling, add salt, baking soda, vinegar etc. in the boiling water for easy peeling and to prevent the eggs from cracking; but non of those methods work perfectly.

I have finally came across with an excellent method for easy peeling and non cracking hard boiled eggs, STEAM them instead. No more boiling! It is easy, quick and foolproof!

Method:

  • Wash the eggs.
  • Boil some water (you want to have enough water in the steamer, so that it won't completely boil away in 20 minutes) in the bottom of the steamer.
  • Place the eggs in the steamer tray, cover with the lid, turn down the heat and simmer for 15- 20 minutes.
  • When the eggs are ready, run cold water over the eggs and let sit in cold water until they are cool enough for peeling. This step will also prevent the eggs from further cooking.
  • Tap the egg on a hard surface all around the egg until the whole egg shows cracks.

  • Roll the egg under your hand gently to loosen the shell.
  • Find the hollow spot at the large end of the eggs (with air pocket) and peel just a little, making sure to get under the thin membrane.
  • The shell will then be peeled off easily, sometimes even in one long piece!

  • If you are not eating the eggs right away, then keep them in the fridge until you are ready to eat.
Another good thing about this steam method is you will not get that grayish green rim along the yolk that results from cooking the eggs for too long.

If you need to prepare a big batch of hard boiled eggs, remember to steam them. Once you have tried, you will never boil the eggs again!

To center the egg yolk for making deviled eggs, place the egg on its side overnight or twirling them during cooking.
