Salami And Basil Non Prove Thin Crust Pizza 无须发酵香脆薄饼


If you are hungry and craving for some quick thin crust pizza and would like to home-make it, then the following recipe might suit you well. You do not have to spend time waiting for the dough to prove which might takes more than an hour. Thin crust speaks for itself, the dough will be baked thin and crispier. The thinner you roll your pizza dough, the crispier the cracker like crust you will get.

You can add a variety of toppings on your pizza but make sure all the ingredients used are not too moist or else it will make the pizza soggy.

Recipe adapted with and minor changes from Beanpanda

Make 2x 12 inches (12") or 30 centimetres (30 cm) pizza


Ingredients:

  • 270 g High protein flour / Bread flour
  • 5 g Instant yeast
  • 3 g Salt
  • 7 g Sugar
  • 1 tbsp Canola oil (or any vegetable oil)
  • 140 g Luke warm water (about 40 C)

Toppings for Salami pizza (ingredient for 1 pizza):
  • Salami 
  • 1 cup of Mozzarella cheese (shredded) 
  • 3-4 tbsp of Tomato paste or to taste
  • Fresh basil leaves (optional)

Methods:
  • Pour the lukewarm water in a big bowl, add in the yeast and sugar. Stir to dissolve the yeast and sugar.



  • Add in canola oil, salt and flour into the yeast mixture. Mix the ingredients well and transfer the mixture to a flat surface, like a table or countertop. Your may line you working surface with parchment paper or pastry mat.





  • Knead with hands until you get a smooth, not sticky dough.

  • Divide the dough into 2 portions for 12" or 30 cm pizza pan OR 3 portion for 8" pizza pan. 
  • Preheat oven to 250 C.
  • Place 1 portion of the dough on the pizza pan and roll it out until it is about 12" in diameters. You may also roll the dough on the work surface and transfer it to the pan. (if you do not have a pizza pan, then you may bake your pizza on an oiled baking sheet) I will fold the edges of the pizza so I will get more crispy crust.

  • Spread the tomato paste evenly on the dough leaving 1" wide border around the circumference.

  • Arrange the salami and basil leaves (if using) on top of the tomato paste, making sure each portion of the sliced pizza will get some salami and basil leaves.

  • Now scatter the shredded cheese on top of the pizza. Season with salt and pepper.

  • Bake in the preheated oven for 5-6 minutes or until the crust is crisp and golden brown and the cheese has melted and begun to brown. I baked my pizza too long, so the cheese was a bit too brown. Nevertheless, it was still good :)

  • Leave the pizza to cold on a wire rack for 5 minutes before slicing (with pizza cutter or a knife) and serving.
(Note: Any unused pizza dough can be kept (wrapping in cling film) in the freezer for one month. Just thaw the frozen dough before use)



You may have variety of toppings for the pizza.
