Almond and Cranberry Florentine 杏仁蔓越莓脆片

I saw this super duper simple and easy Florentine recipe on my FB page recently and decided to give it a try. You don't have to spend a lot of time preparing and baking. It will takes you merely 15 minutes from beginning to the end. Yet, the end products are promising. Effortless,.......sounds good.....? Sure.

There are only 3 ingredients used in this recipe. There are almond flakes, dried cranberries and Florenta. You may purchase Florenta 麦芽粉/糖酥粉 from the baking supplies store. The texture of the Florenta is like white fine breadcrumbs.

You may substitute the almond flakes and dried cranberries with any of your favourite nuts and dry fruits like hazelnut, pine nuts, cashew nuts, sunflower seeds, dried apricot, sultana.

Ingredients:
  • 150g Florentine aka Florenta   
  • 250g Almond flakes or slices
  • 100g Dried Cranberries (cut into smaller pieces)
You will also need a baking tray lined with parchment paper.



Method:
  • Preheat oven at 170C/335F.
  • Add Florenta in a mixing bowl.
  • Add in almond flakes and dried cranberries.

  • Mix well.

  • Spread the mixture evenly on the baking tray.
  • Bake for 10 minutes or until golden brown.

  • Cut into smaller pieces with a sharp knife while it is still hot. You won't be able to do so when it is cool.

  • Leave to cool before storing.
