This Chocolate Almond Cookie is one of my favorite cookie. They just melt in your mouth type of cookies. Let's get started..... :)
Ingredients:
- 250g Butter (room temperature)
- 115g Icing Sugar
- 1 Egg
- 1/2 - 1 tsp Vanilla extract
- 300g Low protein flour or cake flour
- 30g Cocoa powder
- 100g Cornflour or corn starch
- 160g Almond flakes
Method:
- Sift together flour, cocoa powder and cornflour. Set aside.
- Cream the butter until soft.
- Add in icing sugar and beat until light and fluffy.
- Add in egg and vanilla extract. Beat until well mix.
- Add the flour mixture into the butter mixture.
- Fold to mix.
- Then add in the almond flakes and combine to form a soft dough.
- Divide the dough into two equal portions.
- Shape into logs. Wrap with cling wrap or cling film. Chill in the freezer for about 15 minutes or until firm to cut.
- Preheat oven at 170C.
- Cut the logs into slices and bake in the preheated oven for 20 minutes.
- Leave on wire rack to cool completely before storing them in an airtight container.
I have also made some in heart shape by using my sushi maker.
