Chocolate Almond Cookies 巧克力杏仁饼

This Chocolate Almond Cookie is one of my favorite cookie. They just melt in your mouth type of cookies. Let's get started..... :)

Ingredients:
  • 250g Butter (room temperature)
  • 115g Icing Sugar
  • 1 Egg
  • 1/2 - 1 tsp Vanilla extract
  • 300g Low protein flour or cake flour
  • 30g Cocoa powder
  • 100g Cornflour or corn starch
  • 160g Almond flakes


Method:
  • Sift together flour, cocoa powder and cornflour. Set aside.
  • Cream the butter until soft.
  • Add in icing sugar and beat until light and fluffy.

  • Add in egg and vanilla extract. Beat until well mix.
  • Add the flour mixture into the butter mixture. 
  • Fold to mix.
  • Then add in the almond flakes and combine to form a soft dough.

  • Divide the dough into two equal portions. 
  • Shape into logs. Wrap with cling wrap or cling film. Chill in the freezer for about 15 minutes or until firm to cut.

  • Preheat oven at 170C.
  • Cut the logs into slices and bake in the preheated oven for 20 minutes.

  • Leave on wire rack to cool completely before storing them in an airtight container.

I have also made some in heart shape by using my sushi maker.
