Super Moist Banana Cupcakes 香蕉杯子蛋糕


Further to my earlier post on 'one bowl' Banana Cake, I have decided to try out on this Super Moist Banana Cupcake today. The beauty of having the cupcakes is about having your own little cake that you do not have to share :)

It is preferably to use a very ripe bananas as they will be sweeter. The cupcakes come out super moist with mashed bananas mixed in the cupcakes and sliced bananas on the topping. 

Recipe adapted and minor changes from dailydelicious, super banana cake.

Ingredients:
  • 195 g Plain flour or all purpose flour
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 130 g Unsalted butter
  • 1/4 tsp Salt (omit, if use salted butter)
  • 130 g Granulated sugar
  • 1 Whole egg
  • 1 tsp Vanilla extract
  • 3 Ripe bananas (mashed)
  • 85 g Whipping cream
  • 1 tsp Lemon juice
  • 2 Bananas for topping


Method:

  • Preheat oven to 180°C. Prepare 10 cupcake liners on baking sheet.
  • Mashed bananas with a fork (don't over mash if you would like to retain some texture)
  • In a bowl, whisk together the flour, baking powder. baking soda and salt.
  • Add lemon juice in whipping cream and mix well.
  • In the bowl of your electric mixer, or a hand mixer, beat the butter until soft.
  • Add in the granulated sugar and beat until light in colour.
  • Add the egg and beat until smooth. Scrape down the sides of the bowl as needed.
  • Beat in the vanilla extract.
  • Add the mashed bananas and beat until combine.
  • Add in 1/3 of the flour mixture. Fold lightly until incorporated (do not over mix)
  • Add in 1/2 of the whipping cream mixture. Fold lightly until combine.
  • Repeat with the rest of the flour and whipping cream mixture, end with the flour.
  • With an ice cream scoop or two spoons, divide the batter evenly in each liners.



  • Slice the other two bananas into small rings and place on top of the cupcakes. 

  • Bake in the oven for 25 minutes or just until set and a toothpick inserted into the cupcake comes out clean. 

Note: Always check a few minutes before the stated baking time. Do not over bake or the cupcakes will be dry.
  • Remove from oven and place on a wire rack to cool.
