My second cowboy had requested for an ice cream cake to celebrate his 14th birthday with his friends. I searched through the internet and found one that most kids will love. It combines different sorts of chocolates and ice cream in one cake. It is a terrific frozen party treat to cool off form the heat.
In my opinion, ice cream cake is actually much easier to make compare to the normal baked cake. You do not have to be a bakery pro and worry about the cake is under or over baked, not rise properly or cracking on top etc.

Ingredients:
- 2 quart Ice cream of you prefer brand and flavour (I used 1 chocolate and 1 vanilla)
- 43 finger Kit Kat Bar for the side
- 5 finger Kit Kat Bar for the top
- 1 packet 200g M&M milk chocolate candies
- 1 packet 150g Maltesers
- 22 + 6 pieces Oreo cookies (or any other brand)
- 2 Tbsp Milk
You also need a 9 inches or 23 cm spring form pan, lightly spray the bottom of the pan with non stick spray.
Method:
- Put 22 Oreo cookies in a bag and make sure it is seal securely. Roll the rolling pin back and forth over the bag firmly to crush the cookies into fine crumbs (or just crush with the rolling pin).
Note: You may also use a food processor to blend the cookies.
- Add 2 Tbsp milk to the cookies crumbs and mix until well combined. Set aside.
- Break up the remaining 6 Oreo cookies into small pieces. Set aside.
- Arrange the Kit Kat Bar upright all around the side of the spring form pan, as close as possible, with the Kit Kat name facing out.
Note: If you bought the 4 fingers bar, then break them up into 2 fingers each for easy arrangement.
- Press the Oreo mixture evenly over the bottom of the pan.
- Place the pan in the freezer for at least 10 minutes.
- Remove the chocolate ice cream (or your 1st flavour) from the freezer and let it stand at room temperature for 10 -15 minutes. In a large bowl, use a large spoon to stir the ice cream just enough to soften.
- Spoon softened ice cream on top of the Oreo crust and spread evenly.
- Place in the freezer for at least 30 minutes.
- Remove the vanilla ice cream (or your 2nd flavour) from the freezer and let it stand at room temperature for 10-15 minutes. In a large bowl, use a large spoon to stir the ice cream just enough to soften.
- Add the Oreo cookies pieces in the soften vanilla ice cream and mix. Spread evenly over the 1st layer of ice cream.
- Cover with cling film or aluminium foil and freeze for at least 6 hours or until set.
- Decorate the cake with M&M, Kit Kat Bar and Maltesers and return to the freezer until serving.
- Remove the cake from freezer 10 minutes before serving.
- Gently open the spring form pan and remove.
- Slice and serve immediately!
