Whole Tomato Rice 蕃茄饭

Recently, this Whole Tomato Rice recipe from Japan is very popular in Facebook page and on the internet as it is a SUPER simple and easy meal to prepare, yet delicious! You just dump everything in the rice cooker, press the cook/start button and that's it..........that simple!


Ingredients:
  • 2 cups Uncooked rice (long grain or short grain or brown rice etc)
  • 1 Whole Tomato (big and ripe)
  • 2 tsp Olive oil/Vegetable oil
  • 3/4 - 1 tsp Salt, or to taste 
  • 1/4 tsp Pepper, or to taste


I added some canned sweet corn with the rice.


Note: It is good enough as it is but you may add any meat, basil leaves, onion, celery, sweet corn etc to add more flavour.

Method:

Note: I will usually steam my rice over the stove, the method use will be the same as per rice cooker.
  • Wash tomato and remove the stem. Set aside.
  • Wash rice and add water according to the normal amount, then remove 6 Tbsp of water from pot as the tomato contains water (or just add slightly less water than your normal amount).
  • Add in oil, salt and pepper. Mix well.
  • Add in sweet corn. Mix well.

  • Place the tomato in the center of the pot.
  • Place the pot in the rice cooker, cover and press the cook/start button (in my case, I steamed the rice for 25 minutes).
  • When it's done, mash the tomato with rice paddle and toss well.

  • Serve immediately. Itadakimasu! いただきます (means "Let's eat", "Bon appétit"  or "Thanks for the food" in Japanese).

Second day, I couldn't help but made another version with meat and mushroom. It is a complete meal with vegetable and meat (It will take slightly longer time to steam the rice).
