Stir And Bake Banana Cake (Dairy Product Free) 手拌式香蕉蛋糕

Hi there, I am here to share with you all another version of Stir and Bake Banana Cake. Ya, now you know I love banana cake! 

This recipe does not call for any dairy product, ie no milk or butter is used. You may also refer to my previous posting on the other simple and easy recipe on Banana Cake.

Chinese New Year is just one month away and this simple recipe may come in handy when you are thinking of baking a cake for the festive season but still have a lot of things to settle. This recipe will definitely save you lots of time and effort.

This recipe was recommended to me by a friend from a baking book, Easy Stir 'n Bake Cakes. 

Ingredients:

• 125 g All purpose flour or plain flour
• 1 tsp Baking powder
• 1/2 tsp Baking soda or bicarbonate of soda
• 3 Eggs
• 100 - 125 g Castor sugar
• 100 ml vegetable oil (I used canola oil)
• 200 g banana fresh (sliced)

You also need a 10 x 20 cm or 4 x 8 inches loaf pan. Butter of spray with non-stick vegetable spray. Line the bottom of the pan with parchment paper for easy release.

Method:

• Preheat oven to 175C or 350F.

• Combine flour, baking powder and baking soda in a mixing bowl. Mix well. Set aside.

• Combine eggs, oil and sugar.

• Stir the egg mixture into the flour mixture together with the sliced banana. Mix well.

• Pour the batter into the lined pan. Take the pan and drop it sharply on the counter from a few inches several times to break up the air bubbles.

• Bake for 35 - 40 minutes or until a toothpick inserted into the center of the cake comes out clean and the cake spring back when pressed lightly in center.

• Leave the cake in the pan for 10 minutes before turning onto a wire rack to cool. Remove the parchment paper.

You may also add some walnut on top of the batter.
